The Cookbook

Everything on this site started as notes in a kitchen drawer. The cookbook is those notes, tested properly, written down, and put in order.

It is the collection of the recipes we cook at home without pork, tomatoes, or vinegar, plus a full chapter that teaches you to build your own spice blends rather than buying them. That chapter is the part I am proudest of, because it is the part that lets you cook past the recipes.

The holidays are where this way of eating feels hardest, because so much of the traditional table is built on the exact things we leave out. This volume solves that, one holiday at a time.

Desserts that stay inside the rules and still feel like dessert. Baked custards, poached fruit, and rice puddings, mostly, and not much sugar.
